MOWGLI GIN & TONIC

PREP: 5 MINUTES • SERVES 1

I always wanted a gin and tonic for Mowgli that spoke of coriander/cilantro. I love the sheer taste of green in this cocktail. It’s one of our big sellers and feels like a summer’s day with the windows flung open onto verdant meadows.

2cm/¾ inch piece of fresh root ginger, peeled and sliced

2 fresh coriander/cilantro stalks

40ml/1¼fl oz gin

4 tsp lime juice

4 tsp Gomme (see page 214)

ice cubes and crushed ice

125ml/4fl oz tonic water

FOR THE GARNISH

slice of fresh root ginger

1 lime wedge

1 In a cocktail shaker, muddle the fresh root ginger and coriander stalks – this helps to bring their flavours out.

2 Add the gin, lime juice and gomme, then fill the cocktail shaker with ice cubes and shake vigorously for 6 seconds.

3 Fill a collins glass to the top with crushed ice, then strain the cocktail into the glass, adding enough tonic to suit your taste. Finish by garnishing with a slice of fresh root ginger and wedge of lime.
