Mediterranean Salmon Salad Sandwiches

PREP TIME: 5 MINUTES TOTAL TIME: 5 MINUTES MAKES 2 SERVINGS MUFA: BLACK OLIVE TAPENADE

These open-faced sandwiches are packed with essential omega-3 fatty acids. The tapenade packs a flavorful MUFA punch!

1 can (5 ounces) pink salmon, drained

1 medium tomato, chopped

¼ cup crumbled reduced-fat goat cheese

1 tablespoon lemon juice

¼ cup Black Olive Tapenade or store-bought gluten-free tapenade

2 slices gluten-free flax bread, toasted

1. In a medium bowl, combine the salmon, tomato, goat cheese, and lemon juice until blended.

2. Spread the tapenade over both slices of toast and top each with half of the salmon mixture. Cut each in half to serve.

Nutrition per serving: 235 calories, 18 g protein, 17 g carbohydrates, 12 g total fat, 2 g saturated fat, 5 g fiber, 624 mg sodium
