This recipe’s quick and simple balsamic marinade ensures you’ll get tender, juicy flank steak every time. For mouth-watering texture, make sure your grill is nice and hot, which will quickly sear the steak on the outside without overcooking the inside.
Makes 4 to 6 servings
Prep time: 5 minutes, plus 4 to 6 hours marinating time
Cooking time: 10 minutes
⅓ cup balsamic vinegar
¼ cup extra-virgin olive oil
2 garlic cloves, minced
1 tablespoon chopped fresh basil
1 teaspoon dried thyme
1 (1½- to 2-pound) flank steak
Sea salt and freshly ground black pepper
1. In a medium bowl, whisk together the vinegar, olive oil, garlic, basil, and thyme. Place the steak in a glass or ceramic baking dish and pour the marinade over the top, making sure to coat both sides. Cover and marinate the steak in the refrigerator for 4 to 6 hours.
2. Preheat a grill to medium-high heat.
3. Remove the steak from the marinade and gently shake off the excess. Season both sides of the steak with salt and pepper and place it on the grill. Grill to your desired doneness, 4 to 5 minutes on each side for medium-rare, depending on thickness.
4. Transfer the steak to a cutting board, cover it with aluminum foil, and let it rest for 5 to 10 minutes. Slice thinly across the grain and serve.
