Watermelon-Lime Gummies

Gummies are a nutrient-dense snack that serve as a fun (and tasty) way to get more of the gut-healing benefits of gelatin into your diet. You can use a variety of silicone candy molds to make these gummies look like stars, hearts, gummy bears, or even Legos—so let your inner child come out and get creative!

Makes 8 servings (24 or more gummies, depending on mold size)

Prep time: 20 minutes, plus 2 hours chilling time

Cooking time: none

4 cups fresh watermelon chunks, or 2 cups 100 percent watermelon juice

½ cup fresh lime juice

¼ cup raw honey

6 tablespoons grass-fed gelatin

1. If you’re using watermelon chunks, place them in a blender and blend until liquefied. Strain the juice through a fine-mesh strainer and discard the pulp. Skim any white foam off the top of the strained juice and discard.

2. In a medium saucepan, combine the watermelon juice, lime juice, and honey and whisk over medium-low heat until combined. The mixture should be hot but not boiling.

3. While whisking, slowly add the gelatin to the saucepan, sprinkling it in 1 tablespoon at a time. Continue until the gelatin has completely dissolved, 5 to 7 minutes. Avoid adding the gelatin too quickly, which will result in larger clumps that are difficult to incorporate.

4. Remove the pan from the heat and pour the mixture into silicone candy molds set on a baking sheet (see tip). Refrigerate until firm, about 2 hours.

5. Pop the gummies out of the molds and store in an airtight container in the refrigerator for up to 1 week.

Special equipment: Silicone candy mold(s)

Noelle’s tip: You can also pour the mixture into an 8 x 8-inch glass baking dish, refrigerate it until firm, 2 or 3 hours, then cut it into small squares.

Change it up: Swap out the lime juice for fresh lemon juice.
