A WORD FROM THE BARTENDERS

When a cocktail recipe calls for fruit juice, think fresh. Citrus juices in particular should come from a bottle or can only as a last resort. When using orange juice, fresh-squeezed is best, of course—but a store-bought refrigerated juice of good quality will do just fine. The same goes for tropical juices such as pineapple and mango. And take note: Lemon and lime juices should always come straight from the fruit; in a word, squeeze.

An homage to a much-missed publishing imprint. Aquavit, from Scandinavia, is a potent, colorless liquor distilled from potatoes or grain. It is then distilled a second time and flavored with caraway seeds, coriander, or dill.

2 large pimiento-stuffed Spanish olives

½ ounce aquavit or dry sherry, plus extra for the glass

2 ounces Chopin vodka, chilled

Place olives in a 3-ounce shot glass and pour in aquavit or sherry to cover; let soak for 8 to 12 hours. Pour a small amount of aquavit or sherry into well-chilled martini glass; swirl once and discard. Add chilled vodka and garnish with the olives.
