Chili-Rubbed Strip Steak with Lime-Chipotle Sauce

A zesty rub and chipotle sauce adds pizzazz to a simple grilled steak.

For the Lime-Chipotle Sauce:

3/4 cup mayonnaise

1/3 cup sour cream

2 tablespoons freshly squeezed lime juice

1 can chipotle chiles in adobo

1 tablespoon adobo sauce (from the can of chipotle chiles)

Kosher salt and freshly ground black pepper

For the Chili-Rubbed Strip Steak:

1 tablespoon chili powder

1/2 tablespoon paprika

1 tablespoon freshly ground black pepper

1 tablespoon light brown sugar

1 teaspoon kosher salt

4 8-ounce strip steaks, each about 1-inch thick

2 tablespoons olive oil

Vegetable oil, for the grates

a8 To make the Lime-Chipotle Sauce: In a food processor, puree the mayonnaise, sour cream, lime juice, chipotle chiles, and adobo sauce until smooth. Season with the salt and pepper to taste. Cover and refrigerate until ready to serve.

a8 To make the Chili-Rubbed Strip Steaks: In a small bowl whisk together the chili powder, paprika, black pepper, brown sugar, and salt. Season both sides of the steak with the rub. Drizzle the olive oil over the top. Marinate at room temperature for 30 minutes.

a8 Preheat a clean grill to medium-high with the lid closed for 8 to 10 minutes. Lightly brush the grates with oil.

a8 Place the steaks on the grill. Close the lid and cook, turning once, until the desired temperature is reached, 4 to 6 minutes per side for medium-rare or 6 to 7 minutes for medium. Remove the steaks from the heat and set aside to rest for 5 minutes.

a8 Serve with the Lime Chipotle Sauce on the side.

a2 Cooking Tip: Chipotle chiles usually are sold canned and packed in adobo sauce. They are available in many supermarkets as well as Latin markets and specialty food stores. Freeze what you don’t need in this recipe for another time.
