1 Week or More Before Feast

■ Buy any items you need on the Planking Essentials, Pit Kit, and Outdoor Cooking Essentials lists.

■ Pick up firewood or charcoal or arrange for delivery.

■ Pick up steel plate or arrange for delivery.

■ Pick up cinder blocks or arrange for delivery.

■ Decide where to put pit.

■ Order fish.

2 Days Before Feast

■ Build cinder block pit.

■ Do your big grocery shop.

1 Day Before Feast

■ Make vinaigrette and cook barley.

■ Make aioli.

■ Toast bread and almonds for crostini.

■ Make Salsa Romesco.

■ Make ice cream base.

FEAST DAY

Morning of Feast

■ Prepare (but don’t dress!) fennel and celery salad.

■ Pick up fish.

■ Soak planks.

■ Brine fish.

■ Prepare (but don’t dress!) barley salad.

■ Churn ice cream.

■ Stuff tomatoes.

3 Hours Before Feast

■ Prepare tomato mixture for crostini.

■ Prepare berries and topping for slumps but keep them separate.

■ Start pit fire if you’re using wood.

2 Hours Before Feast

■ Light pit fire if you are using charcoal. (Once you have the fire going, you won’t be able to leave it unattended.)

11/2 Hours Before Feast

■ Put stuffed tomatoes in oven or pit oven.

■ Toast crostini on griddle (if not done earlier).

■ Remove cedar planks from water and put sturgeon on planks.

■ Grill and mash avocados.

1 Hour Before Feast

■ Put planked fish over the fire.

■ Put leeks on griddle.

30 Minutes Before Feast

■ Have friends assemble crostini.

■ Dress and toss barley salad.

■ Griddle squid and add to salad.

■ Have friends put topping on slumps and put Dutch ovens on cinder blocks.
