Greek Salad Dressing

Use this dressing in a Greek Mason Jar Salad (see page 155) or mix up the spices to suit another flavor profile. Instead of some or all of the lemon juice, you might like red wine vinegar.


INGREDIENTS

2 garlic cloves, crushed or chopped

1 teaspoon dried oregano

1/2 teaspoon Dijon mustard

1/2 teaspoon kosher salt

1/2 teaspoon coarse black pepper

4 tablespoons lemon juice

8 tablespoons extra-virgin olive oil

INSTRUCTIONS

1    Whisk together all of the ingredients except the olive oil.

2    While continuing to whisk, slowly pour in the olive oil.

3    Refrigerate the leftovers.
