Roasted TOMATO AND GARLIC TOAST

All that is needed for an exceptional toast is one juicy tomato. Roast it in the oven until the juices escape its blistering skin and gently place the oozing tomato on a slice of warm bread. Now you have yourself one delectable slice of toast. —MR

SERVES 2

2 large tomatoes

2 tsp (10 ml) olive oil, divided

2 slices rye bread or any bread

1 clove garlic, sliced in half

4 tbsp (61 g) vegan yogurt or cashew cheese

Red pepper flakes

Sea salt

1 avocado (optional)

Preheat the oven to 400°F (204°C). Line a baking tray with parchment paper.

Drizzle the tomatoes with 1 teaspoon of the oil, place on the baking sheet and transfer to the oven. Once the tomatoes have softened and the skin has blistered, about 25 minutes, remove them from the oven and make your toast.

Toast your bread, and then take the sliced garlic clove and run the clove all over the toast (we are infusing the toast). Now add a layer of either yogurt or cashew cheese to the toast, and then the tomato, red pepper flakes, the remaining 1 teaspoon olive oil and sea salt. Add an avocado to make it more of a meal.
