We took everyone’s favorites—pizza and grilled cheese —and combined them for one of the tastiest sandwiches we’ve ever had. It has it all! And best of all, they’re so easy to assemble. We used our Yeast-Free Garlic Flatbread for the bread, because it’s like a pizza crust, and our Four-Ingredient Homemade Pizza Sauce. It just doesn’t get much better than this. —LM + AM
SERVES 1
1 tsp extra-virgin olive oil, plus more for brushing on the bread
½ cup (33 g) sliced mushrooms
2 cups (450 g) baby spinach
2 tbsp (22 g) black olives
2 pieces Yeast-Free Garlic Flatbread or whatever type of bread you like (see Note) (use gluten-free bread)
Vegan mozzarella or cheddar cheese, use as much as you like
¼ cup (62 g) Four-Ingredient Homemade Pizza Sauce
In a small skillet, heat the olive oil over medium-high heat. Add the mushrooms and cook for about 10 minutes, or until they release their water and are nicely browned. Add the spinach and the olives and cook until the spinach is just wilted.
Spray or brush a thin layer of olive oil on one side of each piece of the flatbread. On one piece of flatbread, sprinkle a liberal layer (or as much as you like) of cheese on the non-oiled side. Put the mushroom and spinach mixture over the cheese and then drizzle the pizza sauce over the top. Sprinkle with a little more cheese and put the second piece of flatbread (oil-side up) on top.
Heat a griddle or the skillet you cooked the mushrooms in over medium heat.
Carefully put the sandwich in the pan and cover. Cook for about 3 to 5 minutes, or until the bread is golden brown and the cheese has melted. Gently flip the sandwich and cook for another 3 to 5 minutes, or until that side is golden brown.
Note: For the best results, use bread that will mimic pizza crust, such as focaccia or ciabatta.
