Having been born outside of the US, I may be considered a newbie as far as tacos go. But living in southern California gave me a crash course in their limitless awesomeness. Here, jackfruit takes center stage with its citrusy and spicy flavors. Even though jackfruit isn’t exactly packed with protein, its texture makes it one of the best plant-based meat alternatives one can dream of, especially when used in tacos. —CS
MAKES 12 TACOS
12 (6” [15-cm]) vegan corn tortillas, heated
1 recipe Yogurt Avocado Dressing
1 small head red or green cabbage, trimmed and thinly shredded
1 recipe Citrus Chile Jackfruit
GARNISHES
Chopped fresh cilantro
Thinly sliced scallion
Roasted pepitas
Lime wedges
On a tortilla, spread enough yogurt avocado dressing to cover the center. Add a handful of shredded cabbage. Top with a healthy amount of jackfruit and your garnishes of choice. Repeat this with the remaining tortillas and serve immediately.
