MAKES 14 TO 16 CRISPIES
3 tbsp (42 g) coconut oil
½ cup (55 g) raw cacao powder
1 tbsp (18 g) tahini (or any nut butter)
1 tsp ground cinnamon
⅓ cup (80 ml) maple syrup
1 tsp vanilla powder
Sea salt
2½ cups (55 g) puffed/popped quinoa (or popped brown rice)
Start by making the chocolate sauce. In a small pan over medium-low heat, melt the coconut oil, raw cacao, tahini, cinnamon, maple syrup, vanilla and sea salt together until it becomes a thicker chocolaty mixture. Now pour the chocolate sauce over the popped quinoa and mix well. Scoop a large tablespoon of the chocolate crispies into small baking cups. Pop them in the freezer for at least 20 minutes to harden. Store them in the freezer and enjoy!
