You’ll surprise your friends with this stewed parfait. With winter comes crisp apples and juicy oranges. Luckily not much is needed to coax the flavors of seasonal fruit. Let the fruit simmer in a bath of cinnamon-ginger and generously pour it over a bowl of creamy coconut yogurt.
If you’re pressed for time, an easy trick for an even quicker breakfast parfait is to make the stewed fruit the night before. It only takes 10 minutes, and what you are left with is far better than what you could have missed out on—a yogurt bowl filled with the best that winter has to offer. —MR
SERVES 2
1 apple, cored and cubed
1 tbsp (14 g) coconut oil
1 tsp ground cinnamon
½ tsp ground ginger
Juice of 1 orange
1 pear, cored and cubed
Handful raisins or currants
2 cups (490 g) coconut yogurt
Toss the apple into a small saucepan along with the coconut oil, spices and orange juice. Then warm everything over medium-high heat for 10 minutes—with the lid halfway on. Toss the pear and raisins into the same saucepan to warm for another 5 minutes. The stewed fruit will be done cooking when the pieces have softened and can easily be pierced with a fork. Add a splash of water if the pot ever dries out. Stir the stewed fruit into a bowl of yogurt and enjoy!
