WHO NEEDS AN OVEN? WHEN I WAS A KID, I USED TO make a refrigerator biscuit cake (also known as an icebox cake) that only needed to be assembled and then refrigerated for a few hours before serving. I quickly realized that I could create lots of amazing desserts pretty easily without using the oven, which was very useful on really hot days or if the oven was already being used for something else. Recipes like My Family’s Favorite Tiramisu or The Simplest Rocky Road Fudge are great choices if you can’t stand the heat but you want to stay in the kitchen. This is also the chapter where you’ll find several of my signature mug cakes, “micro-baked” in a microwave, giving you a chance to eat cake without leaving yourself with a bunch of pans in the sink to clean up.
