This Sweet Matzo Brei is made of scrambled eggs, grain-free matzo and a drizzle of real maple syrup to create a healthy version of an old favorite. Your leftover Passover matzo has a new home, and it’s in this “French-toasty” delicious dish!

2 eggs
2 tablespoons (30 ml) full-fat coconut milk
1 teaspoon maple syrup
Pinch sea salt
1 sheet Matzo (here or here), broken into bite-sized pieces
1 tablespoon (15 ml) Dairy-Free Butter (here), avocado oil or coconut oil
FOR SERVING
Sliced strawberry
Coconut palm sugar to taste
In a medium bowl, beat the eggs with the coconut milk, maple syrup and salt. Mix in the broken matzo.
In a medium-sized skillet, heat the butter (or cooking fat) over medium-high heat for about a minute.
Pour in the egg and matzo mixture, shifting the eggs with a spatula as they cook, to prevent burning. Cook for a total of 3–4 minutes, or until the eggs are cooked through and the matzo is slightly toasted.
Remove from the skillet and garnish with a fresh strawberry or a sprinkle of coconut palm sugar.
Bubbe’s tip: There are several methods to making a great matzo brei; with this one, be sure not to soak the grain-free matzo too long or it will become a soggy dreck. Trust me, would you!?
