For many people, meat and potatoes is a classic combination, but my feeling is that when it comes to entertaining, there are so many more things to do with beef, pork, and lamb than to pair them with root vegetables. For a quick dinner, the pork tenderloin (here) has the most incredible caramel glaze; and for a true steakhouse experience at home, cook the Ribeye with the garlic-butter baste (here). And my mother would never forgive me unless I brought special attention to her chouriço and peppers (here), a simple, one-pot dish that has been my absolute favorite since childhood.
