The base of this leafy green salad is arugula, a good source of lutein and zeaxanthin, which help promote eye health and protect against macular degeneration. The garlicky Caesar dressing perfectly balances the arugula’s strong, distinct flavor. I toss the salad with protein-rich Crunchy Roasted Chickpeas (here) to round out the meal. The Caesar dressing also pairs wonderfully well with All Hail the Kale Salad Remix (here) and Rainbow Slaw (here). And finally, the optional edible flowers add a dose of colorful nutrients as a garnish. The rich hues reflect an abundance of antioxidants that can help ward off diseases from heart disease to cancer.
2 tablespoons whole-grain mustard
2 tablespoons nutritional yeast
2 tablespoons almond meal
¼ teaspoon finely chopped garlic
2 tablespoons freshly squeezed lemon juice (about 1 lemon)
1 teaspoon low-sodium tamari
1 tablespoon extra-virgin olive oil
½ teaspoon sea salt
Freshly ground black pepper, to taste
Cayenne pepper, to taste
4 cups arugula
1 cup red grapes, halved
½ cup raw walnuts
20 edible flowers, such as violas (optional)
In a blender, combine all the dressing ingredients with ¼ cup water. Blend until smooth and creamy. Place arugula, grapes, and walnuts in a large bowl and toss with dressing. Taste and adjust salt and pepper, as desired. If using, add edible flowers before serving.
TIP The optional edible flowers can be found at farmers’ markets, grocery stores, and online or you can grow your own.
