This vibrant, colorful salad tastes just as good as it looks. The more colors the better, because each color signifies particular phytonutrients that can help prevent and reverse chronic diseases and help you live a longer, healthier life. 2 cups shredded purple cabbage (about one small head of cabbage)
1 cup corn, fresh or cooked from frozen according to package instructions
1 large carrot, shredded
1½ cups precooked black beans or 1 (15-ounce) can or carton
½ cup cherry tomatoes, halved
½ small red onion, chopped
3 garlic cloves, chopped
Caesar Dressing (here)
2 avocados, pitted and cubed
In a large bowl, combine all the ingredients, except the avocados, making sure the vegetables are evenly coated with the dressing. Fold in the avocados and serve.
