BRAISED SESAME KALE

During the colder winter months or around the holidays, these braised greens hit the spot, especially paired with Mac and Cheese (here) and Crispy Tofu Bites (here).

1 tablespoon extra-virgin olive oil

¼ medium red onion, diced

1 large bunch kale, stems removed and coarsely chopped

¼ cup low-sodium vegetable stock

¼ teaspoon sea salt, or to taste

Black pepper, to taste

½ teaspoon raw sesame seeds

In a large skillet, heat the oil over medium heat. Stir in the onions and sauté until translucent, 3 to 5 minutes. Stir in the kale and sauté for 2 to 3 minutes or until just wilted. Add remaining ingredients, except the sesame seeds, and cook for 2 to 3 more minutes. Using a slotted spoon to drain the liquid, place the kale on a plate, sprinkle sesame seeds on top, and serve immediately.
