- ¾ cup roasted red sweet peppers, drained and finely chopped
- ¼ cup finely chopped fresh fennel bulb
- 1 Tbsp. chopped Kalamata olives
- 2 tsp. olive oil
- 2 tsp. balsamic or red wine vinegar
- ½ tsp. stone-ground mustard
- ½ tsp. snipped fresh rosemary or oregano
- 1 small clove garlic, minced
- Pinch cayenne pepper
- 1 cup sliced fresh cucumber, zucchini, and/or wide sweet pepper strips
1. In a bowl stir together the first nine ingredients (through cayenne pepper). Cover and chill up to 24 hours. Serve as a dip with sliced vegetables.
