  • ¾ cup roasted red sweet peppers, drained and finely chopped
  • ¼ cup finely chopped fresh fennel bulb
  • 1 Tbsp. chopped Kalamata olives
  • 2 tsp. olive oil
  • 2 tsp. balsamic or red wine vinegar
  • ½ tsp. stone-ground mustard
  • ½ tsp. snipped fresh rosemary or oregano
  • 1 small clove garlic, minced
  • Pinch cayenne pepper
  • 1 cup sliced fresh cucumber, zucchini, and/or wide sweet pepper strips

1. In a bowl stir together the first nine ingredients (through cayenne pepper). Cover and chill up to 24 hours. Serve as a dip with sliced vegetables.
