Seafood often gets ordered out at restaurants but is overlooked at home. And that’s a shame, because fish is not only low in calories and full of nutrients, but is one of the quickest meals you can cook in your Instant Pot®.
The first step to cooking delicious seafood is to trust where you’re buying your fresh seafood or to purchase a sealed, frozen product. If you’re working with a fishmonger, don’t be afraid to ask when the shipment came in, where it came from, was it wild-caught, and can they prepare the fish for you? If that fishmonger can’t or won’t answer those questions, find another one.
Once you’ve selected your fish, prepare your meal within 1–2 days for optimal freshness. Also, remember to use the Instant Pot®’s quick-release feature for the dishes in this chapter, which range from Coconut Curry Sea Bass to Low-Country Boil. You don’t want to do a natural release with most fish, as it will continue to cook and become dried out if the pressure releases slowly.
